SHEET PAN CHICKEN FAJITAS! Dinner made with this

SHEET PAN CHICKEN FAJITAS!

Dinner made with this quick and simple dish!

2 tablespoons olive oil, plus more for greasing 2 chicken breast, cut into thin strips 1/2 green bell pepper
1/2 red bell pepper
1/2 red onion, sliced
1-2 teaspoons chili powder 1/2 teaspoons sea salt 1 teaspoon onion powder 1 teaspoon garlic powder 1/4 teaspoon ground cumin ½ teaspoon smoked paprika
pinch black pepper
chopped cilantro to finish

Mix veggies, chicken and spices with olive oil.
Bake at 425f 20-25 mins
Serve over cilantro lime rice or salad with@some salad for a quick healthy dinner!

Makes 2 servings

SEVEN SPICE CHICKEN THIGHS!

One of my favourite spice mixes turns this chicken from good to phenomenal!

Quick, easy and delicious. We paired it with some potatoes, quinoa tabouli and hummus for a healthy delicious lunch or dinner.

2 pounds skinless bone in thighs
5 teaspoons Arabic 7 spice mix
1 onion grated
2 cloves garlic minced
1/4 cup parsley minced
3-4 tbsps olive oil

Add everything to a bowl except chicken. Mix well then add chicken and mix until well coated in the marinade. Let sit 30 mins.

Air fry 25 mins at 375* or until cooked through. Let sit 10 mins then enjoy!

HOMEMADE TAHINI!

I love making things from scratch and this tahini recipe is so easy that’s you’ll never need to buy store bought again!

1 cup white sesame seeds
3-4 tablespoons olive oil
Pinch of salt

Add sesame seeds to a skillet and toast over medium heat until golden.

Add to the bowl of a high speed blender along with olive oil and salt.

Blend until smooth scraping down the sides and adding more olive oil as needed.

Once done add to a mason jar, and store in fridge until ready to use.

GF CORNFLAKE FISH STICKS! 😍

Cornflakes make a great substitute for breadcrumbs. Just plus in the food processor until desired crumb. Next use in place of breadcrumbs like we did with these fish nuggets!

We seasoned the cornflakes, Cornflour replaces the regular flour, then we air fried at 375 for 12 minutes until golden!

Love it when a recipe comes together!

This GF Wonton soup definitely passed the cookbook recipe test!

50 down and 50 to finish the cookbook!

Still working out some kinks but here’s the wonton skin recipe:

2 cups gluten free all purpose flour with gum (I used a homemade blend)
1 egg yolk
1 whole egg
Water to bind

In a food processor add your flour and eggs.
Plus until it begins to crumble then gradually add about 1/4 water until a dough forms.

It should be slightly sticky. Turn out onto a starch floured surface. Knead to bring together. Wrap in cling then let sit 30 minutes.

Roll out on a starch floured surface to 1/8 inch thickness. Cut circles and add your filling. Cover extra dough to prevent drying out.

Guess what?!? Your favourite movie snack is an all round good snack.

Popcorn is a great gluten free snack not only for the movies but also for daytime snacking. It’s full of fibre and d whole grain.

However not all popcorn is healthy. Microwave popcorn can be full of added fats from the butter which isn’t good. As well as caramel popcorn which is full of added fats and sugar too.

The popcorn we snack on is oil and fat free. Made with our oil free popcorn maker and a little salt. It’s just right and perfect for movie night…or snacking.
