Spring is in the air! That means it’s time to break out the lemon recipes and whip up some lemon desserts like these Gluten Free Lemon Baked Donuts.
These last couple of weeks, the market has been overflowing with lemons. They are one of my favorite citrus and I love to use them in infused water, desserts and even dinner recipes to add some freshness.
With Easter and Spring in the air, I was looking for lemon recipe ideas and these Gluten Free Lemon Baked Donuts are a great treat and perfect for the Easter Bunny.
I love baked donuts! You get the treat of a donut with less fat because there is no frying. Plus you get to create flavor combinations that are yummy and flavorful. And after getting my first donut pan a couple of years ago, I have never looked back!

Making these Gluten Free Lemon Baked Donuts
These Gluten Free Lemon Baked Donuts came about as a happy accident. While going through some of the recipes on the blog I realized my Gluten Free Cinnamon Sugar Baked Donuts, could easily be adapted to create this lemon treat.
It was simply a matter of making a few swaps, and creating a lemon glaze to top them off.
Lemon Flavour
To give these Lemon Baked Donuts their lemony flavor, we used a combo of lemon juice, lemon zest and to give it some extra kick, lemon infused oil.
The great thing with these donuts, is that it uses such a small amount of oil that the lemon flavor comes through and not the base flavor of the oil.
Finally, after you’ve baked the donuts, it simply a matter of dipping in a lemon glaze and serving them up.

Bring in the season of spring with these delicious Gluten Free Lemon Baked Donuts!
Ingredients
Baked Donuts
1 cup GF 1:1 Baking Flour
1/4 cup granulated
1 teaspoon baking powder
pinch of salt
1/3 cup milk
1 tablespoon lemon juice
1 teaspoon lemon zest
1 teaspoon vanilla
1 XL egg
1 Tablespoon coconut oil, melted
Lemon Glaze
1 cup powdered sugar
1 tablespoon lemon juice
1-2 tablespoons milk
Instructions
For the Donuts:
Preheat oven to 425 degrees F.
Grease donut pan with cooking spray or melted butter and set aside.
In a measuring cup, combine milk and lemon juice, mix then set aside for a couple of minutes.
Next, in a medium bowl combine gluten free flour, sugar, baking powder, lemon zest and salt. Whisk until well combined.
To the milk mixture, add vanilla, egg and melted lemon infused coconut oil, then whisk to combine.
Add the wet ingredients to the dry ingredients and whisk until just combined making sure not to overmix.
Place the batter in a piping bag or zipper bag with the corner snipped off.
Carefully pipe the batter out into the prepared pan, filling the donut space 2/3 way.
Bake the donuts in the center of the oven for 8 - 10 minutes until the tops are lightly golden and the bottom is a depper brow. You can also check them by sticking a toothpick in the center and it comes out clean.
Cool the donuts in the pan for about 5-6 minutes then transfer onto a cooling rack and cool completely before dipping in glaze.
For the Coating:
In a small bowl big enough to fit the donut comfortably when ready to dip, add the powdered sugar and lemon juice. Mix to combine, then add the milk gradually until desired consistency.
Coating the Donuts
Once the donuts are cooled and ready to coat, carefully dip in the lemon glaze, add spinkles then set aside.
Repeat with the remaing donuts then serve with tea or coffee!
Notes
Can't have dairy, simply use your favourite dairy free milk substitiue in place of the milk in the donuts and the glaze.
Donut pans come in different sizes, so depenind on the size of your pan, the donuts may bake in less time and you may get less or more donuts.
