Gluten Free Cinnamon Sugar Baked Donuts
Last year, the little chef turned 3 and one of her request was baked donuts decorated like Minnie Mouse and Mickey Mouse. She loves donuts, and it so happened that I had just gotten myself a donut pan. My first attempt however was not her Minnie and Mickey Donuts, but a Gluten Free Cinnamon Sugar Baked Donut that was a real treat to eat with a cup of tea. Which then turned into the base for her Birthday Donuts.

I love baked donuts, especially since changing to a gluten free diet, because they give me that donut look, they aren’t fried and it’s so much simple than regular fried donuts.
What do you need to make Gluten Free Cinnamon Sugar Baked Donuts?
Donut Pan
This was one of the best baking pans that I bought and I use it for so many things, not only donuts. It’s great for baking bagels, Brownie Donuts or Downies as I like to call them, and the perfect pan when I have left over cake batter.
Gluten Free Flour
We used a 1:1 baking blend which gave us the best results and a lighter donut. Some of the heavier flours made the donut dense.
Buttermilk
This recipe uses buttermilk, but sometimes that can be hard to fin here in Trinidad so I simply use milk and add 1/2 teaspoon of apple cider vinegar to the milk and let sit for a couple minutes.
You could also make this recipe dairy free by using rice milk or another dairy free substitute in the batter.
Cinnamon Sugar Coating
I love donuts that are simple and cinnamon sugar happens to be one of my favourites, but you could also top it with chocolate and sprinkles for a traditional donut look.

Gluten Free Cinnamon Sugar Baked Donuts
Make tea time a treat with these Easy Gluten Free Cinnamon Sugar Baked Donuts. Super delicous with a dairy free option.
Ingredients
Baked Donuts
- 1 cup GF 1:1 Baking Flour
- 1/4 cup granulated
- 1 teaspoon baking powder
- pinch of salt
- 1/4 cup + 2 Tablespoons Milk
- 1/4 teaspoon apple cider vinegar
- 1 teaspoon vanilla
- 1 XL egg
- 1 Tablespoon coconut oil, melted
Cinnamon Sugar Coating
- 2-3 Tablespoons butter melted
- 3 Tablespoons granulated sugar
- 4-5 Tablespoons ground cinnamon
Instructions
For the Donuts:
- Preheat oven to 425 degrees F.
- Grease donut pan with cooking spray or melted butter and set aside.
- In a measuring cup, combine milk and vinegar, mix then set aside for a couple of minutes.
- Next, in a medium bowl combine gluten free flour, sugar, baking powder, and salt. Whisk until well combined.
- To the milk mixture, add vanilla, egg and melted coconut oil, then whisk to combine.
- Add the wet ingredients to the dry ingredients and whisk until just combined making sure not to overmix.
- Place the batter in a piping bag or zipper bag with the corner snipped off.
- Carefully pipe the batter out into the prepared pan, filling the donut space 2/3 way.
- Bake the donuts in the center of the oven for 8 - 10 minutes until the tops are lightly golden and the bottom is a depper brow. You can also check them by sticking a toothpick in the center and it comes out clean.
- Cool the donuts in the pan for about 5-6 minutes then transfer onto a cooling rack and cool completely before dipping in sugar.
For the Coating:
- In a small bowl big enough to fit the donut comfortably when ready to dip, add the melted butter and set aside.
- In another bowl, combine sugar and cinnamon, mixing until well combined, then set aside.
Coating the Donuts
- Once the donuts are cooled and ready to coat, carefully dip in the metled butter, let drain slightly, then dip in the cinnamon sugar coating.
- Repeat with the remaing donuts then serve with tea or coffee!
Notes
- Can't have dairy, simply use your favourite dairy free mix substitiue in place of the milk and dairy free butter to dip the donuts before coating.
- Donut pans come in different sizes, so depenind on the size of your pan, the donuts may bake in less time.

Is the 2nd ingredient supposed to say 1/4 cup sugar?
