Easy Gluten Free Sugar Cookies
Christmas is my favorite time of the year, everyone who knows me, knows that, and one of my favorite things to make every year are Sugar Cookies. But now they aren’t just plain sugar cookies, they are Easy Gluten Free Sugar Cookies.

This recipe has been around for quite some time. I found it in our my grandmother’s cookbooks that have torn pages with recipes older than me. It is super simple, full of flavor and a great recipe to make with the kids.

What do you need for our Easy Gluten Free Sugar Cookies?
Gluten Free Flour: You definitely want a 1:1 baking blend. This gives a lighter crunchier cookie. We use Bob’s Red Mill 1:1 baking blend in this recipe with great results, as well as the homemade blend from my Homemade for The Holidays Cookbook, which you can get a copy here.
Butter or Dairy Free Substitute: I’ve made this recipe with butter and dairy free substitutes. Both give a delicious cookie.
Extracts: I love the flavor of these cookies because it is a mix of vanilla and almond essence. But if you’re not a big almond flavor fan, simply use only vanilla extract or add some lemon zest for a citrus based cookie. Unfortunately I haven’t tried these with egg substitute so I’m not sure how it would turn out, but if you do, please let us know!

The best part of this Easy Gluten free Sugar Cookie recipe is that it isn’t just for Christmas, but makes a great rolled cookie recipe for Easter, Spring or anytime of the year. Just add your favorite cookie icing and have fun!

Easy Gluten Free Sugar Cookies
It's beginning to look a lot like Christmas and we'er breaking out the cookie cutters and getting ready to bake up a batch of these Easy Gluten Free Sugar Cookies!
Ingredients
- 2 Cups GF 1:1 Baking Flour + more for rolling out. (I've used a homemade blend and Bob's Red Mill 1:1 with great results)
- 3/4 tsp baking powder
- 1/2 tsp salt
- 1/2 cup softened butter
- 1/2 cup granulated sugar
- 1 tsp almond essence
- 1/2 tsp vanilla essensce
- 1 egg
- 1 tsp Xantham Gum (unless your dough already has gum in it)
Instructions
- In a large bowl, sift together the flour, baking powder and salt.
- Next, using a stand mixer or hand mixer, cream together softened butter and sugar.
- Stir in the essences, then add the egg and continue to beat until fluffy.
- Add the flour, in two portions mixing until smooth after each addition. Once all the flour is added, a soft dough would have formed. Cover with plastic wrap and chill for at least 30 mintues to 1 hour before rolling out.
- Grease a or line a baking sheet with parchment and preheat the oven to 350 ° F about 10 minutes before baking the cookies.
- Sprinkle surface with flour before turing the dough out onto the counter. Knead the dough a little to bind, then sprinkle the surface with more flour, sprinkle on top and using a rolling pin, roll the dough to about 1/4" thick.
- Using a cookie cutter, cut out desired shapes, place on the baking tray and bake for about 10-15 minutes until the edges are golden.
- Finish with your favorite frosting or simply add a glass of milk and leave them for Santa!!
