Happy July! It’s the first day of the month and that calls for a new recipe! And I’ve got the perfect one for you to try and get your fingers wet in the land of gluten free baking. It’s my Gluten Free Coconut Oil Puff or Choux Pastry and it’s more commonly know. In Trinidad these are a real treat for breakfast of snack, stuffed with chicken salad, cheese paste or tuna paste, and it’s something that’s always on our menu.

For as long as I can remember, Black Forest Cake was always around for Birthday’s and special occasions. It was the one thing you knew would be on the menu and up to this day, that tradition hasn’t changed. We still desire the flavors of Black Forest Cake and the specialness surrounding it.
Can you believe Mother’s Day is right around the corner? To me it was just Easter a couple of weeks ago and we were dreaming of Carrot Cake.
But as the saying goes, time waits on no one, so it’s down to the wire and were thinking up desserts for our Mother’s Day Menu. And I think we’ve got the perfect one with this Gluten Free Red Velvet Cake!
It’s dry season here in Trinidad and the air is a real mess. With the Sahara dust and the dust from the dried grass and shrubs my allergies are taking a real beating. And when I’m feeling under the weather, there’s nothing that works better to easy my symptoms and give me a boost that a bowl of soup.
If you’re like me, the hardest part of gluten free eating is breakfast. And sometimes, you want something fresh, homemade and delicious, not out of the freezer section of the grocery store (which is where most of the gluten free breads can be found.) But as you know most gluten free breads or similar items usually take a few hours to make and require quite a few ingredients that makes it difficult to make on a whim.
