Another Year…The Journey Continues

Another year….another journey ahead. 

With every birthday that comes around, it’s a time to reflect on what the past year and in my case the past couple of decades have meant in my journey of life. A close friend told me recently that I should document my journey, not just the food aspect, but also the entire journey that has brought me to this place, and this moment.

 

We all have dreams and life rarely follows the dreams and the path that we want to take. Instead we are faced with a different road, a different path and in the process we find the path that we should have been on from the beginning.

If I had to be honest, where I am now is not where I expected myself to be at this moment and this birthday. I envisioned something very different for myself. But, I also didn’t envision myself writing a blog and having to life a gluten free lifestyle to ensure my health.

It’s funny how those little things that we take for granted can be a big change and moment in our lives. Without my gluten intolerance, gluten allergy and a mountain of other ailments, I wouldn’t be writing this. 

And in the midst of it all, I have to say, I am very proud of myself! I wrote my first cookbook and a new one is on the way, along with so much more!

Over the past 4 years, I have heard people say, pray that you get healed. Pray that you can live a normal life. But, just like with COVID-19, this is my new normal, eating gluten free is my new normal and sometimes we just have to embrace those things in life that we can’t quite understand, but make us a better person and aid in our salvation. 

Birthdays are a great way to embrace the past, thank God for the present moment, submit the future to Him and see where the road takes you. And that is what I am doing this year. I am letting go of all the things I think I can control (well at least trying to, haha laughs the control freak in me), embracing the things I can with courage and asking God for the wisdom to do what needs to be done.

With all that’s happening in the world, only God is in control and it’s hard, but sometimes we have to let go the reigns and let him be our guide. So as I enter another year of life, my motto is:

Jesus I surrender myself to you, take care of everything 

and

The Serenity Prayer.

Here’s to the past 30+ years and cheers to future but God’s grace! Happy Birthday to me!!

And how can I forget to share my birthday cake!

following a gluten free diet means that I have to make my own cake. But I love to bake, so it’s no trouble. And with this year my birthday falls right before Father’s day so we made a delicious treat! Gluten free Pineapple Upside Down Cake Jars!
