What do you get when you combine my two favorite loaf cakes?!?!? You get this super delicious and moist Banana Carrot Cake!! If there are two things I love in the world of desserts it’s a good carrot cake filled with nuts and cinnamon and the other is a slice of banana bread with lots of cinnamon and a ton of bananas to keep it moist. So to me it was only fitting to combine the two flavors and create this super awesome, best of both worlds cake!!
Nothing says Christmas (when it comes to food) like sugar cookies!! There’s something about the combination of sweet and crunchy with a hint of vanilla that makes it the perfect treat to have at Christmas. All you need is some milk and some cocoa then you’ve got the makings of a storybook Christmas by the tree.
Christmas is without a doubt my favorite time of the year. I love the lights, the feeling in the air that’s different and of course I looooveee the food!! I don’t know about you guys, but breakfast is the hardest meal for me to find. Especially when you’re in a rush and need to leave the house in a hurry. And it’s even harder to find a breakfast place that caters to our special needs. So one of my goals is to find breakfast solutions that I can just grab and go when we’re I don’t have time to make a sit down breakfast.
When my Friends at Bobs Red Mill Trinidad asked me to create a recipe using Arrowroot, I must admit I was stumped for a second. Mostly I use Arrowroot to bind my burgers, thicken my soups and as a flour in my blends, but never as the main ingredient.

Sigh…But that didn’t help much and I had to go back to my recipe drawing board and think again. I played around with different things and came up with a few ideas until it hit me….why not make Arrowroot Coconut Wraps instead of Tapioca Coconut Wraps.
Our of all the beans and peas lentils is definitely my favorite hands down. Growing up, my mum used to cook this for us at least once a week. Made with a combo of vegetables, and cooked down until nice and thick. I always stole a bowl before anyone else got to it. And once there was leftovers I always added some water and made soup.
