Gluten Free Cookies and Cream Cups

It’s been a really hot couple of days and we’re keeping them cool with these Gluten Free Oreo Ice Cream Cupcakes! Super simple, and takes only about 15 minutes to make. The only down side is how long it has to freeze before they are ready to enjoy, but definitely worth the wait.

When it comes to ice cream, I am a purist and I love the plain old traditional vanilla. But every once in a while I really enjoy something different and my other go to flavour was always cookies and cream. As you know that flavour is not gluten free, so when the gluten free oreos came out and A.S. Brydens and Sons Ltd. reached out, I decided to create my own and make these Gluten Free Oreo Ice Cream Cupcakes.

This recipe was actually inspired by one I found by The Pioneer Woman, and although the basics are the same, we made a few tweaks to make them just how we liked.

How to make these Easy Gluten Free Oreo Ice Cream Cupcakes?

You will need:

  • Gluten Free Oreos – if you’re in Trinidad these are available nationwide in the groceries. 
  • Melted Coconut oil or butter
  • Your favorite vanilla ice cream
  • A 12 cup muffin pan with liners
  • Sprinkles and whipped cream, cause why not indulge?!?!?

How to make these Gluten Free Oreo Cups?

First you need to crush the Oreos, either in a food processor or in a ziplock bag using a rolling pin. I like this option because I get to work out a little frustration hammering away.

Next, transfer to a bowl, add the coconut oil or melted butter. Mix well then divine evenly among the 12 lined cups, pressing down to make a nice firm crust. Then to make the ice cream topping, mix the vanilla ice cream with some chopped Oreos, spoon over the crust, add some more Oreo chunks, freeze and enjoy.

How easy is that? That’s what I love about this recipe. It is super easy, but delicious and makes the perfect summer or hot day treat! And if you’re looking to make it even more decadent, add some whipped cream and sprinkles, or top with another oreo cookie.

Gluten Free Oreo Ice Cream Cupcakes

Ingredients

  • 18-24 Gluten Free Oreos
  • 2 tablespoons melted coconut oil or melted butter
  • 1 pint or 2.5 cups vanilla ice cream, softened
  • Sprinkle for topping and serving

Instructions

  1. When ready to make your cups, remove ice cream from the freezer and let sit until slightly softened. Line a 12 cup muffin pan with foil or silicone liners and set aside.
  2. While ice cream is softening, either in a food processor or by placing the oreos in a ziplock bag and using a rolling pin to crush, crush up 12 cookeis until it ressembles a crumb.
  3. Transfer the crumbs to a bowl, add the coconut oil or melted butter and stir until moistened. Divine the crumbs evenly among the 12 lined cups, pressing down firmly using the back of a spoon. Set aside until ready to fill.
  4. Once ice cream is softened, add to a bowl. Chop up 6 oreos until they are in chunks then add to the softened. Mix until well combined, then spoon the ice cream mixture into each of the cups.
  5. Crush up 3-4 more cookies and sprinkle on top, then place in the freezer until firm. Abotu 3-4 hours.
  6. Once firm they are ready to serve. Simply remove from the liners, transfer to a plate and top with whipped cream and sprinkles or an oreo cookie to serve.
