Guacamole (Gluten Free + Vegan)

Whole-Moly Guacamole! I love Avocado season and it so happens that it’s just around lime season which makes it the perfect opportunity to make a bath of this Easy Gluten Free Vegan Guacamole.

I love Avocados or as they say in the Caribbean, ZabocaThe ones we get are a little different to what you get in the US and Canada. They are bigger in size, and in my opinion, sweeter. It is the variety called the Pollock variety. 

And there is nothing like cutting into an Avocado that is smooth like butter. YUMMY, YUM YUM! I makes the perfect paring with lunch and even breakfast.

But next to eating it as a side for breakfast or even lunch, I love to whip up a batch of Guacamole and enjoy it with a bag of Gluten Free Corn Chips, making it the perfect mid day snack or of you’re like my dad eating a bowl while watching the CPL Cricket. (Definitely not my thing. More of a FIFA Fan!)

But whatever your choice, this quick and easy Gluten Free Vegan Guacamole is a winner every time.

What is Guacamole?

Made with avocados, lime, onions, and cilantro or shadon beni, it is a dip that can be served with salads, as a dip or side dish. 

Guacamole Ingredients 

The main ingredient is Avocado. But after that it is pretty simple.

Cilantro or Chadon Beni

In Trinidad we get Chadon Beni or Culantro which is a stronger version of Cilantro. But if you can’t get the Culantro, Cilantro works just as good, you simply need to add more. 

Chadon Beni

Once you’ve got those two ingredients, the rest is pretty simple.

        • Onion
        • Garlic
        • Lime
        • Tomato
        • Salt
        • Jalapeno (optional for a little spice)

Guacamole

Easy Gluten Free Vegan Guacamole

Ingredients

  • 1 medium to large avocado or zaboca (skin & seed removed)
  • Juice of 1 lime
  • 1/2 onion, finely chopped
  • 1 lg clove garlic, finely chopped
  • 1 tomato, diced
  • 2 tbsps Chandon Beni chopped or 4-5 tablespoons cilantro
  • 1 - 1/2 jalapeño pepper chopped (optional)
  • A good dash of salt to taste

Instructions

  1. In a medium bowl, add avocado. Using a fork or potato masher, mash to desired consistency.
  2. Add the lime juice, onion, garlic, tomato, jalapeno and cilantro or chadon beni. Mix well to combine.
  3. Add salt, and season to taste.
  4. Transfer to serving bowl, serve immediately or chill until ready to serve with an extra splash of lime and chopped cilantro or chadon beni.
