Coconut Oil Puffs

Happy July! It’s the first day of the month and that calls for a new recipe! And I’ve got the perfect one for you to try and get your fingers wet in the land of gluten free baking. It’s my Gluten Free Coconut Oil Puff or Choux Pastry and it’s more commonly know. In Trinidad these are a real treat for breakfast of snack, stuffed with chicken salad, cheese paste or tuna paste, and it’s something that’s always on our menu.

Can you believe Mother’s Day is right around the corner? To me it was just Easter a couple of weeks ago and we were dreaming of Carrot Cake.

Yogurt Cheddar Biscuits

If you’re like me, the hardest part of gluten free eating is breakfast. And sometimes, you want something fresh, homemade and delicious, not out of the freezer section of the grocery store (which is where most of the gluten free breads can be found.) But as you know most gluten free breads or similar items usually take a few hours to make and require quite a few ingredients that makes it difficult to make on a whim.

Quinoa Salad

2019…How did you get here so fast? I asked myself this question so many times in the first day of the new year, that I was certain I would answer myself. But the truth is, time has passed so fast, that I couldn’t believe the new year was upon us already. And all those plans I had for starting the new year with healthy eats went right out the window as I took a bite of the leftover Fruit Cake and sipped on the last of my Ponche de Creme.

Happy Christmas Eve!! Still can’t believe it’s here already, but time waits on no one, and I’m seeing that with all the Christmas preparations still left to do. I’m thinking that somethings are definitely going to be left out, but one thing for sure that is going on the list is a bottle or three of Ponche de Creme or Eggnog as some of you may know it.
