Gltuen-Free Mini Pizza

Happy June Foodies! I know it’s been a while and a crazy couple of months. But I’m happy to be back creating recipes, blogging and doing what I love. To kick off this month, (with summer just around the corner), I decided to share something quick and simple with these Gluten-Free Mini Pizzas.
I love a good snack! But unlike most of my family instead of craving the sweet stuff, I love something savory. Which makes these Gluten-Free Mini Pizzas the prefect item to stock in my fridge as well as the freezer for easy eating.
What do you need to make these Gluten-Free Mini Pizza?
The most important part of these Mini Pizzas is the Gluten-Free Pizza Dough that is the base. I used the gluten-free pizza dough recipe for the pizza wreath from my Trini Melee Christmas Cookbook as the base. Once you have the base for your gluten-free mini pizzas, it’s next about choosing the toppings.

Topping your Gluten-Free Mini Pizza
The great thing about this recipe is not only easy, but also customizable. The gluten-free pizza crust base is gluten-free and dairy-free (although not egg free) which means you can make this a dairy-free pizza with the topping you choose.
I can eat dairy, so my choice of cheese is grated mozzarella, but you can use a dairy free substitute such as Daiya Dairy Free Mozarella.
After choosing my cheese, I decide on my pizza sauce. I recently found pizza sauce in a squeeze bottle which was perfect! I was able to control the amount, especially with the small size of the pizza and it was delicious too. I also have a quick and easy pizza sauce recipe here which you can use also.
Once you’ve chosen your cheese base it’s time to choose your toppings. For me I like a variety such as:
- Mushrooms
- Bell Peppers
- Onions
- Olives
- Pineapple (although I know many people might object. But I’m from the Caribbean! Pineapple is a must for me.)
- Shredded Chicken
- Pepperoni
- Ham and so much more.
The possibilities are endless! Simply choose your favorite!
How to make Gluten-Free Mini Pizzas?
Making these Mini Pizzas is a simple process.
- First make the gluten-free pizza crust or dough.
- Cut into 3″ inch circles. (I found this was the best size.)
- Add your sauce & toppings.
- Bake and then serve right away or save for later.

Gluten Free Mini Pizza

Ingredients
For The Pizza Crust
- ½ cup white rice flour
- ⅓ cup millet flour
- ⅓ cup tapioca flour
- ⅓ cup potato starch or corn starch
- 1 ½ teaspoons xanthan gum
- 1 teaspoon baking powder
- 2 teaspoons yeast
- 2 tablespoons sugar
- 1 egg
- 2 tablespoons olive oil
- ½ teaspoon salt
- ½ cup warm water
For The Toppings
- Pizza or Marinara Sauce
- Mozarella Cheese
- Assorted Veggies of your choice such as: Mushrooms, Onions, Peppers, Olives etc.
- Meat topping of your choice such as: ground sausage or pepperoni
- Fresh Basil for garnish
Instructions
- In a bowl, combine gluten-free flours and xanthan gum. Whisk to combine, then add the baking powder, yeast, sugar, and salt. Whisk again then create a well in the center.
- Create a well in the flour mixture, add egg, oil, and warm water. Using a fork or dough whisk, mix until a dough begins to form.
- Sprinkle your work surface with a little gluten-free flour.
- Turn the dough onto the surface and knead until it comes together. Add to a greased bowl, cover and let sit for 30 - 45 minutes until just about doubled in size.
- When the dough is ready, preheat oven to 375°F. Line a baking sheet with parchement and set aside.
- Turn out onto work surface sprinkeld with gluten free flour. Roll out until just about ¼ inch thic or a little thicker. Using a 3' cutter, cut out as many circles as you can. Transfer to prepared baking sheet. Reroll leftover pieces and cut more circles until all the dough is used up. You should get about 12 - 18 circles depending on how thick you roll the dough.
- Once all of your circles are laid out, prepare your toppings. Using spoon, place a dollop of pizza sauce on each circle, then using the back of a spoon, spread to the edges. Next, add your cheese, veggie and or meat toppings. You can also add a little more cheese on top.
- Bake in preheated oven for about 12 minutes until the edges are golden, the cheese is melted and the crust is baked.
- Remove from oven, transfer to a cooling rack. Finish with some fresh basil (optional), then serve.
Notes
- These mini pizzas freeze well. Simply add cooked and cooled pizzas to a zipper bag and freeze. To heat, simply warm in the microvave or toast at 350°F in the oven.
- We used a 3" cutter, but you can use a bigger size, just remember to adjust the cooking time.
- Thsi recipes uses white rice flour, but you can use brown rice flour if you choose.
- Try not to use too much marinara sauce as this may cause a soggy base.
- To make sure the veggies cook, we precook them slightly, then add them to the pizza to finish cooking while the pizzas bake.
