Gluten Free Stuffed Arepas

Just last week I was having a chat with a friend and she was talking about how much she missed bread after changing to a gluten free diet. While chatting with her I realized I’m not a bread person, but more of a biscuit, cracker and arepa kind of girl. 

For me, bread can come and go, but arepas is something that I love. They are naturally gluten free and by adding some cheese you can create these delicious Gluten Free Stuffed Arepas that are sure to please. 

In Trinidad and Tobago, when we hear the word Arepas  we tend to mean something more along the lines of an Empanada that is made with yellow cornmeal and stuffed with ground beef. But traditionally, Arepas are made with white corn, shaped in a circle and served with cheese on the side. 

One morning my dad asked if I could stuff the cheese inside and ta-da our Gluten Free Stuffed Arepas were born.

How to make Gluten Free Stuffed Arepas?

Making arepas is quite easy and requires only 3 ingredients. We used the original recipe and simple shaped them and stuffed them with cheese then grilled them. 

The result was melted cheese goodness in a casing or warm white corn. 

Can you stuff them with something besides cheese?

When it comes to arepas, cheese is always our first choice, so it was not surprise that I chose cheese to stuff them with. But we’ve tried these with shredded beef, chicken and even ground beef with great results. Simply follow the process and use your stuffing of choice.

Gluten Free Stuffed Arepas

Prep Time: 5 minutes
Cook Time: 6 minutes 4 seconds
Total Time: 11 minutes 4 seconds

A simple twist on the traditional corn arepas, stuffed with cheese, these make a great and easy gluten free treat! Can't have dairy, leave it out and make it vegan or stuff it with your favorite protein.

Ingredients

  • 2 cups GF White Corn Meal
  • 2 1/2 cups warm water
  • 1/2 teaspoon salt
  • 2 cups grated cheese or shredded meat like beef or chicken.

Instructions

  1. In a bowl, add water, salt and gradually add in the cornmeal.
  2. Once all the corn has been added using a silicone spatula, spoon or fingers, mix until a wet dough begins to form.
  3. Set dough aside to rest for a couple of minutes. (The dough will abosrb the water and firm up)
  4. While the dough if resting, grate cheese and set aside.
  5. Once the dough has rested. Using your hands, scoop up a portion of the dough into your hands.
  6. Roll to form a ball, then carefully create a space in the center by cupping it and rotating in the palm of your hand.
  7. Add a little portion of cheese and carefully seal. Flatten out the arepa to about 1/2 inch thick, set aside and continue with the rest of the dough.
  8. When it's time to grill, heat a skillet over medium and grease lightly with coconut oil. Grill the arepas on either side for about 3-4 minutes until golden. It may take a couple of batches to get them all done.
  9. Serve warm and enjoy!

Notes

Can't have dairy, simply leave out the cheese and make regular vegan arepas or ue your favourite shredded meat instead of cheese and have a delicious treat.
