Easy Gluten Free Chilli Con Carne
These days we’re buying in bulk, buying smartly, and making meals that stretch. When it comes to shopping smartly, one of the things we we always have in the freezer is ground beef. With 1 pound of ground beef we can make a variety of meals.
With things like Tacos, Hamburger Helper and Easy Baked Meatballs, we always have minced meat on hand. But lately the thing that I’ve loved making with ground beef is Chilli. And if you’re looking for a recipe that stretches and is easy to make, look no further than our Easy Gluten Free Chilli Con Carne.

Chilli or Chilli Con Carne as it’s known by its popular name, is dish originating from Mexico made with beef, tomatoes and red beans that have been cooked down with chilli and other spices to give a depth of flavor.
Chilli is a naturally gluten free dish, and paired with some cheese garlic pasta, then finished with a sprinkling of cheese. This Chilli is super delish and a great weeknight dinner treat or a comforting bowl of yum on a rainy day.

When it comes to our chilli, we’ve added a few ingredients to make this dish pop even more. Instead of using regular oil, we sauted our meat in Chilli Infused Coconut Oil. Plus we used coconut sugar to ad some low carb sweetness and our secret instant coffee. With these simple additions we created a Gluten Free Chilli Con Carne recipe that is sure to please.

Easy Gluten Free Chilli Con Carne
Enjoy the delicious flavours of Chilli with this easy, gluten free recipe with a few added twists.
Ingredients
- 1 lb Minced or ground beef
- 2 cloves garlic, finely chopped
- 1 cup onion, chopped
- 1/2 cup carrot, chopped
- 1 red or green bell pepper, chopped
- 1 (14 oz) can of diced tomatoes
- 1 can of red beans, rinsed and drained (15 oz)
- 2 Tbsp, Tomato Paste
- 2 tsps paprika
- 1-2 teaspoons of Chilli Powder (depending on how hot you would like it)
- 1 teaspoon ground cumin
- 1 teaspoon dried oregano
- 1/2 teaspoon dried thyme
- 1 teaspoon brown sugar
- 1 teaspoon Salt
- 1/2 teaspoon Pepper
- 2 teaspoons instant coffee
- 1 tablespoon Chilli Infused Coconut Oil
- 1/2 Cup boiling water
Instructions
- In a large pot or dutch oven, oven medium high, heat coconut oil, add onion, sprinkle with a little salt, and cook until fragrant and translucent.
- To the onions, add garlic, carrots and bell pepper, stir to combine with the onions and cook for another of couple minutes.
- Add the ground beef, and using a spoon break it up into smaller pieces and cook until no longer pink. (about 5-7 minutes)
- Next add the tomatoes, tomato paste, herbs, spices, brown sugar and 1/2 cup boil water. Stir to combine and season with Salt and pepper.
- Then add the drained red beans and coffee, stir to combine. Bring the mixture to a boil, then lower the heat and simmer for 25-30 minutes, stirring occasionally to ensure that the sauce isn’t drying out and sticking to the bottom of the pot. If the sauce is drying out simply add a couple of tablespoons of water.
- Finally season with salt to taste, then let sit for about 5 minutes before serving over mashed potatoes or gluten free pasta with a dollop of sour cream and grated cheese.
