Easy Gluten Free Lasagna Skillet

Lasagna is one of my favorite dishes. I love the combination of the layers of meat, pasta with cheese and white sauce that when baked together creates a one pot dish that is super delicious. 

Making traditional lasagna can be time consuming and sometimes I want the flavor of lasagna without all the work. That’s where this Easy Gluten Free Chicken Lasagna Skillet comes in.

A twist on the Gluten Free Lasagna Skillet in my Trini Melee Cookbook  it has all the flavors of lasagna in one pot. And the best part is that it can be ready in 30 minutes or less.

Meat

Traditionally lasagna is made with ground beef which is a flavor I love. Every so often I like to change things up and reduce the family’s red meat intake. Using ground chicken instead of ground beef gave our lasagna skillet great flavor with less fat. If you want you can substitute the chicken for beef and give it a more traditional flavour. 

Other than changing from beef to chicken, our Easy Gluten Free Chicken Lasagna Skillet uses mostly the same ingredients as regular lasagna.

Pasta

We swapped the regular gluten free lasagna skins for gluten free penne or fusilli. Not the work well it just depends on which one I have on hand. I prefer the fusilli as the ridges in pasta allow for the sauce to stick better to the pasta.

Cheese no Cheese Sauce

A key step in my layered lasagna is the white cheese sauce that I use in the middle of the layers. Although this version uses no cheese sauce, it is topped with cheese which still gives the cheesy top of lasagna, but a lot leaner without the added cream of a cheese sauce.

Pasta Sauce

I’m an adventurous cook, so I tend to make my own pasta sauce, but with all the ready-made versions that are gluten free, it is easy to just pick up a jar of your favorite flavor to use. The different versions add its own flavor to the dish, but it is still delish all the way.

We’ve gathered our ingredients so now it’s time to make your Easy Gluten Free Chicken Lasagna Skillet.

Easy Gluten Free Chicken Lasagna Skillet

Easy Gluten Free Chicken Lasagna Skillet

Get all the flavors of lasagna without the hassle, in this Easy Gluten Free Chicken Lasagna skillet! A weeknight 30 minute meal!

Ingredients

  • 3 cups dried pasta, such as penne or fusilli
  • 2 tablespoons olive oil
  • 1 pound ground chicken
  • 1 onion diced, about 1 cup
  • 3 cloves garlic, finely chopped
  • 1 1/2 tablespoon Italian seasoning
  • 24 oz prepared pasta sauce
  • 1 -2 tablespoon agave or sugar
  • 1 1⁄2 - 2 cups grated cheese
  • Salt and pepper to taste

Instructions

    1. Cook the pasta according to the package directions. Drain and set aside, reserving a little of the pasta water.
    2. In a large skillet heat oil over medium high heat until shinny. Add onion and sauté until tender.
    3. Next add the garlic, sauté with onions, then add ground chicken and cook until done.
    4. To the chicken and onions, add Italian seasoning, agave
      and pasta sauce. Stir to combine then gently fold in the cooked pasta.
    5. Season with salt and pepper to taste, then spread the mixture to a smooth layer and cover with grated cheese.
    6. Reduce heat to low, cover and simmer for 8-10 minutes until the sauce is heated through and cheese is melted.
    7. Once cheese is melted and sauce heated through, broil in the oven on high until golden.
    8. Let cool slightly before serving with gluten free garlic bread and fresh basil or parsley.

Notes

If you prefer you can sub the chicken for beef and get the flavours of traditional beef lasagna instead.
