Easy Gluten Free Shrimp Pesto Pasta
Meatless Monday is quick and easy in the Off The Wheaten Path kitchen, with our Easy Gluten Free Shrimp Pesto Pasta. Using our Dairy Free and Nut Free Pesto recipe, this dish is all homemade and full of flavor.


Pesto is one of my favorite sauces. We use it to stuff chicken, top meatballs, spread on wraps and so much more. Adding it to pasta of course is one of the more traditional ways, and we added some shrimp to take it up a notch.

How to make this Easy Gluten Free Shrimp Pesto Pasta
Pesto and pasta go together like apples and cinnamon. Adding shrimp to the mix was just another way to take this dish from good to great. It was as simple as sautéing some shrimp along with some tomatoes before we added the pasta and the rest of the ingredients.



For our recipe we used our dairy free and nut free pesto recipe, but you could use your favorite gluten free store bought recipe.
What I love about this recipe, is that it is so hard to mess up. Once you’ve gathered a few simple ingredients, you can have dinner for two done is less than thirty minutes.
I don’t know about you, but that is my kind of weeknight meal!

Easy Gluten Free Shrimp Pesto Pasta
A delicious combo of Shrimp, Penne & Pesto, our Easy Gluten Free Shrimp Pesto Pasta is yummy and done in 30 minutes or less!
Ingredients
- 6 oz gluten free penne pasta
- 6 oz deveined shrimp, small
- 1/2 teaspoons garlic powder
- 1 clove garlic
- 2 tablespoons olive oil
- 5 tablespoons prepared pesto
- 2 tomatoes, diced (about 1 cup)
- 1/3 cup white wine or reserved pasta water
- Salt and Pepper to taste
- 1/4 cup parmesan cheese (optional)
Instructions
- Cook pasta according to package direction. Once cooked, drain, reserving some of the pasta water, then set aside.
- To the shrimp, add 1/2 teaspoon garlic powder, sprinke with salt and pepper then set aside until ready to use.
- In a large skillet, add olive oil, heat over medium high heat, then add garlic and tomatoes. Saute for a minute or two to soften.
- Next add shrimp, pesto, and white wine or pasta water. Cook together for about 3 mintues until pink.
- Once cooked, add cooked pasta and stir to combine. If sauce is too thick, add some pasta water to loosen.
- Finally, stir in parmesan cheese if you're using it, season with salt and pepper to taste, then serve.
