Happy July! It’s the first day of the month and that calls for a new recipe! And I’ve got the perfect one for you to try and get your fingers wet in the land of gluten free baking. It’s my Gluten Free Coconut Oil Puff or Choux Pastry and it’s more commonly know. In Trinidad these are a real treat for breakfast of snack, stuffed with chicken salad, cheese paste or tuna paste, and it’s something that’s always on our menu.

Can you believe Mother’s Day is right around the corner? To me it was just Easter a couple of weeks ago and we were dreaming of Carrot Cake.

If you’re like me, the hardest part of gluten free eating is breakfast. And sometimes, you want something fresh, homemade and delicious, not out of the freezer section of the grocery store (which is where most of the gluten free breads can be found.) When it comes to cake, there’s no other, like a simple sponge. With its light and airy texture and mild vanilla tones, I think the only thing that can make it better is to add a little orange or lemon and make it gluten free! And that is what we did to make this simple but divine Orange Sponge Cake!
