Gluten Free Chocolate Banana Bundt Cake

When it comes to bananas, I’m all for the Banana muffins and Banana breadsBut hands down one of my favorite ways to enjoy them is with chocolate. And nothing satisfies my banana chocolate craving like this Gluten free Chocolate Banana Bundt Cake with Coffee Drizzle.

Gluten Free Chocolate Banana Bundt Cake

Rich in chocolate and that hint of coffee, there are no words to describe how delicious this Gluten Free Chocolate Banana Bundt Cake is! Plus it only uses one bowl, no mixers required. My kind of cake!

Bundt Cakesare one on f my favorite types of cakes to make. I love the finished look of those ridges made from the pan, and the way the glaze goes down the groves to make it a picture perfect cake.

Tips for making the bundt cake:

This cake is fairly simple and not too difficult to mess up, but just keep these things in mind when making your bundt cake.

  • Makes sure to grease and flour your bundt pan well so that your cake pops out easily. You don’t want to go through all that work only for the cake to stick in the pan.
  • Using a GF Baking blend such as Bob’s Red Mill 1:1 or a GF white blend works best. Some of the bean based baking blends change the flavor of the cake.
  • Mash your bananas well, and try not to have too much chunks, this can affect the cake results. 
  • Want to bump up the coffee flavor, add a teaspoon of instant coffee to your cake batter.

Our final tip: Slice up that cake and drizzle on some more coffee glaze before serving. It is amazing! Enjoy foodies!

Gluten Free Chocolate Banana Bundt Cake Coffee Drizzle
Yield: 1 Cake

Gluten Free Chocolate Banana Bundt Cake

Got some leftover bananas? Turn them into this delicious and rich Banana Chocolate Bundt Cake. Finished with a coffee drizzle, it’s the perfect afternoon snack!

Ingredients

For Bundt Cake:

  • • 4 Ripe Bananas (about 1 cup mashed)
  • • 2 eggs
  • • 1/2 cup brown sugar or coconut sugar
  • • 1 tsp vanilla
  • • 1/2 cup coconut oil (re ned) or a neutral oil
  • • 1 1/2 cups Gluten Free 1:1 Baking Flour or GF All Purpose Baking Flour
  • • 1/3 cup Cocoa Powder
  • • 1 tsp baking soda
  • • 1 tsp baking powder
  • • 1 heaped teaspoon cinnamon
  • • 1/2 tsp salt
  • • 1/2 cup chocolate chips

For Coffee Glaze:

  • • 1 - 1 1/2 cups Powdered Sugar
  • • 1/4 tsp vanilla
  • • about 2 - 3 tbsps brewed coffee

Instructions

    1. Preheat oven to 350°F.
    2. Grease and flour a bundt pan, making sure to get all the grooves to ensure that you cake doesn’t stick then set aside.
    3. In a large bowl, add bananas and using a fork or masher, mash the bananas until there are no more chunks left.
    4. Add eggs, coconut oil, brown sugar and vanilla. Whisk until well combined and becomes creamy looking.
    5. Next fold in the GF flour, cocoa, baking powder, baking soda, salt and cinnamon until well combined.
    6. Finally add in the chocolate chips if you’re adding then and gently fold in, trying not to over mix the batter.
    7. Pour the batter into the prepared bundt pan, and finish with a sprinkle of chocolate chips.
    8. Bake for about 45-50 minutes until a skewer stuck in the center comes out clean.
    9. Let stand in the pan for about 10 minutes, then remove and finish cooling on a wire rack.
    10. While the cake is cooling in a measuring cup add 1 cup powdered sugar, 1/4 tsp vanilla and 2 tbsps of brewed coffee.
    11. Using a whisk mix until a thick syrup forms. If it’s too thin add a little more powdered sugar, if it’s too thick add more coffee gradually until desired consistency
    12. Once cake is ready to serve, drizzle with glaze, slice and serve!

      Yes you can use another pan, just monitor it as its baking to see when it’s done.
