Friday Finds: Christmas Cookies

OffTheWheatenPathTT

Can you believe there’s only 12 days left until Christmas? When I started writing this post it there was still 16 days until Christmas and I was still on a fun high from our trip to the Noel Festival. It was amazing! We saw thousands of lights, got pictures with Santa Clause, we got to pet reindeers, sat in giant teddy bears, found elves hidden in the light maze and sipped on Crantini’s. That was just half of the fun! And as we walked through the magical light show, the only thing that was missing was a cookie in one hand! It was then that I got the inspiration for this week’s Friday Finds. Christmas Cookies!

Cookies are iconic at Christmas time. With cookie exchanges, leaving cookies out for Santa, sharing with friends and family, Christmas and Cookies go hand in hand. But gluten free Christmas Cookies are not always the easiest to find and make. Over the years I’ve made my fair share of flops, but I’ve also created a handful of recipes that I can tweak in the flavor area, turning 1 dough into 3 flavors and that way I’m able to save time, have cookies that turn out great every time and not run myself down come the last week before Christmas.

However, if you’re like me, with every year, I still like to shake things up and add a recipe or two, just to spread my Christmas Baking wings. So over this week, after digging through my recipe books and searching Pinterest, I’ve found a few cookie recipes that look fun to try, along with my traditional ones for my Sugar Cookies and Thumbprint Cookies.
