Looking for the perfect healthy side? This Gluten Free Vegan Lentil Salad is easy filling and perfect for lunch or dinner.

Anyone who knows me knows that I absolutely loveeee lentils. Actually it’s not only me, but also my mum and sister. I’m not sure what it is about them, but they are my favourite peas and I’m always trying to use it in new ways.

Some of my favourites are traditional Caribbean lentils, spicy lentil soup, lentil Bolognese and so much more! But this gluten free vegan lentil salad is the first time I’ve tried to make it cold and we absolutely loved it!

Let’s talk ingredients for this Gluten Free Vegan Lentil Salad

Making this salad is fairly easy, uses simple ingredients, and because it requires no cooking, you can whip it up in less than 15 minutes for a quick salad. You will need:

  • Lentils – we used canned lentils for quick and easy. But you can cook dried lentils a well. Using the dried lentils will talk longer to cook, but you will get the same results. Check out this link for how to cook dried lentils.
  • Peppers – we used a combination of red and green bell peppers for a nice color combination and flavour. But if you have only green or only red, that’s fine also.
  • Onions – red onions are sweeter and great for raw salads, but if you don’t have red onions, regular onions are okay too.
  • Shadow Beni (Culantro) or Cilantro – I love the taste of Shadow Beni, which is like cilantro on steroids (or at least that is how I like to describe it.) But if you’re not a big fan of cilantro flavour, you can add to taste, but you definitely want to add at least a little. It makes a big difference in the salad.

Dressing for our Gluten Free Vegan Lentil Salad

Just like any salad, you want to add a dressing that really brings all the flavors of the veggies together. For this salad, we used a Mustard Lime Dressing that really makes all the ingredients pop. This dressing is so yum, it works not only for the Lentil Salad, but also on a regular green salad.

Serving this Gluten Free Vegan Lentil Salad

This salad is so yum all by itself, but I like to serve with some grilled chicken or grilled salmon for a great lunch or dinner.

Easy Gluten Free Lentil Salad

Ingredients

For the dressing

  • 2 tablespoons lime juice, fresh
  • 2 teaspoons brown mustard or dijon mustard
  • 1/2 teaspoon dried oregano
  • 2 tablespoons olive oil
  • 1 tablespoon apple cider vinegar
  • 1 teaspoon agave
  • Salt and pepper to taste

For the Salad

  • 1 (15 oz) can lentils, drained and rinsed or 1 cup cooked and cooled
  • 1/2 cup red bell pepper diced
  • 1/2 cup green bell pepper diced
  • 1/4 cup red onion diced
  • 2 roma tomatoes diced
  • 2 tablespoons shadow beni, finely chopped or 1/4 cup cilantro chopped
  • Salt and pepper to taste

Instructions

  1. In a measuring cup or bowl, add all the ingredients for the dressing.
  2. Whisk together until creamy and well combined. Season with salt and pepper to taste then set aside.
  3. In a large bowl combine all the ingredients for the salad.
  4. Toss to mix well, then add the dressing and mix again until the dressing is well mixed with the lentils and veggies.
  5. Season with salt and pepper to taste then chill for at least one hour before serving.
