I remember the first time I heard about baking with zucchini. I was a little baffled at how that simple veggie could be turned into muffins, loaves and more. Until I tried it myself and I was hooked!

Now whenever I see zucchini at the market, I always grab a few to make noodles (zucchini noodles). Or to bake up either my Gluten Free Chocolate Zucchini Loaf or these easier to carry and snack on Gluten Free Chocolate Zucchini Muffins.

Let’s Talk Ingredients for these Gluten Free Chocolate Zucchini Muffins!

The main ingredients for these Chocolate Zucchini Muffins include:

  • Fresh Grated Zucchini
  • Gluten Free Baking Flour – we used our homemade blend. But you can use your favorite baking blend with gum. 
  • Cocoa powder or Carob Powder
  • Yogurt
  • Extra Large eggs – gives that little extra liquid you sometimes need in gluten free baking.
  • Sweetener – we love Coconut sugar in this recipe!
  • Rising agents
  • Chocolate Chips 
  • Oil – we use coconut oil but you can also use vegetable oil or melted butter.

How to make these Gluten Free Chocolate Zucchini Muffins

What I love about this recipe, is that it’s not only healthy and delish, but easy and requires one bowl. To make them you:

  • Whisk together the wet ingredients: egg, yogurt, coconut oil, vanilla and sugar.
  • Then you sift in the dry ingredients. 
  • Finally fold in the zucchini, followed by some of the chocolate chips.
  • Divide it among the cupcake liners. Add the remaining chocolate chips. Bake and then enjoy warm. 
  • How easy is that!

A few tips for making our Gluten Free Chocolate Zucchini Muffins.

To make these dairy free, use your favorite dairy free yogurt and chocolate chip in place of the regular. 

Coconut sugar is our go-to sweetener when making such as these. The cocoa powder masks the dark color of the coconut sugar and it makes this recipe refined sugar free. But you can also use brown sugar or xylitol too.

Gluten Free Chocolate Zucchini Muffins

Prep Time: 10 minutes
Cook Time: 20 minutes 15 seconds
Total Time: 30 minutes 15 seconds

Ingredients

  • 1 cup gluten free 1:1 baking flour
  • 1/2 cup cocoa powder
  • 3/4 teaspoon baking soda
  • 1/4 teaspoon baking powder
  • 1/2 teaspoon salt
  • 2 XL eggs
  • 1/4 cup coconut oil
  • 1/4 cup yogurt
  • 1/2 cup coconut sugar or brown sugar
  • 1 teaspoon vanilla
  • 1 cup chocolate chips
  • 1 1/2 cups grated zucchini

Instructions

    1. Preheat oven to 350°F. Line a 12 cup regular muffin pan with liners and set aside.
    2. In a bowl, combine flour, cocoa power, baking powder, baking soda, and salt. Whisk to mix well then set aside.
    3. In a large bowl, combine yogurt, eggs, oil, sugar and vanilla, whisk to combine.
    4. Add the dry mix to the wet and whisk until just combined trying not to over mix.
    5. Next add the grated zucchini, fold into the batter, then fold in 3/4 cup chocolate chips.
    6. Divide the batter evenly among the 12 prepared cupcake liners.
    7. Sprinkle the tops with the remaining chocolate chips, then bake for 15-20 minutes or until a toothpick stuck in the centre comes out clean.
    8. Serve warm with a cup of coffee or tea and enjoy!

Notes

To make these muffins dairy free, substitue the regular yogurt for you favourite dairy free alternative and use dairy free chocoalte chips.
